One Ham, Five Meals

I’m not sure if these are family recipes or if I just made them up, but here is how I got five suppers out of one ham.

Day 1: Traditional Ham Dinner

I used a bone-in ham that was on sale the day after Easter for 67 cents a pound.  I don’t think I need to go into the actual recipes on this, if you have any questions, look on the ham package or check out allrecipes.com

Day 2: Pea Soup

I hate pea soup, but I don’t mind this recipe.  It’s a family recipe from my husband’s side.

The day before, I carved most of the meat off the ham bone.  I put the bone in the crockpot, covered it in water, and added a bag of rinsed split peas.  Then I added the following: 1 diced onion, 4 sliced carrots, and salt and pepper to taste.  I put the crock pot in the refrigerator, and the next morning took the crockpot out and started it to cook all day on low.  Before I served it, I took out the ham bone and tasted it to make sure there was enough salt and pepper in the soup.  I served the soup with Jiffy cornbread.

Day 3: Breakfast for Supper

I fried some ham and made pancakes and eggs.  My mouth is watering, just typing this and remembering how it tasted.

Day 4:  Potato Bar

1 or 2 baked potatoes per person, cubed ham, broccoli cooked with Velveeta.  Each person piles ham and broccoli on their potato.

Day 5: Scalloped Potatoes with Ham

Slice 2 potatoes per person into thin slices, put into a casserole dish.  Add diced ham.  Dallop 1/2 TBSP butter or margarine, 3 inches apart, over the top.  Sprinkle 1 TBSP salt and 1 tsp pepper over the top.  Bake at 350 F for 1 hour.

That’s how I did it.  If we didn’t have so many ham sandwiches for lunch, I could have made some navy bean soup, too, but those ham sandwiches were really good.
